We planted a half bed of radishes in our garden last year and enjoyed them so much. This year we decided to plant a whole bed of a couple different varieties. Since I am not the most genius of gardeners, I planted them all at the same time. We had a massive amount of radishes to go through and only had a few weeks to enjoy them. Since I have recently done a ton of googling and have prepared so many radish containing meals, I thought I would share my top five favorite radish recipes.
This recipe was really light and refreshing. We didn't use micro greens like it called for. I just used some various greens from our garden and it was amazing.
2. Roasted Radishes
A friend told me roasted radishes are really great with rosemary, but I just cut mine in half and roasted them in olive oil and sea salt. Roasting radishes takes the spicy bite out of them so it makes your kids more likely to eat them which is a bonus.
We preferred it without the snap peas, but it's a great summer salad. A perfect recipe if you are looking for something to take to a potluck.
4. Radish Greens Pesto
The greens are apparently the most nutritious part of the radish. I do not like the greens in salad, so I searched for other ways to use them. We add the greens to smoothies on occasion and I started adding them to homemade pesto. I use this recipe, but I sub out half of the spinach for radish greens. I also use walnuts instead of pine nuts because I'm cheap.
This is one of the most delicious meals I have ever prepared. I loved how many radish greens I was able to use in it, and it was incredibly simple. Of course I doubled the bacon.

Have you tried pickling them? I LOVE them in the table pickles you get at good Mexican restaurants. Mm!
